Stuffed Brinjal with aloo and drumsticks


This is quick yummy curry that can be made in the pressure cooker and has goodness of drumsticks to it as well. It goes well with roti, paratha and rice. This recipe got featured in top 3 in a Cookpad contest. 


Ingredients: 
  1. 250 gms small size brinjal
  2. 200 gms aloo (small size aloo)
  3. 2 drumsticks
  4. 200 gms sem phali (Lima beans) - this is optional
  5. to taste Salt
  6. 1 tsp jaggery powder or sugar
  7. 3 tablespoon each of coconut and ground nut powder
  8. pinch hing
  9. 3 tablespoon oil
  10. 1 tsp each of garam masala, red chilli powder, white til
  11. 2tsps of dhania jeera powder
  12. 1/2 tsp each of mustard seeds and jeera
  13. 1/2 cup chopped dhania leaves and methi leaves

Method:
  • Wash the brinjal, aloo and give it a small cut for stuffing. Cut the drumstick into 3-4 pieces. Clean the sem phali (you have to remove its outer lines and peel it into small shapes)

  • Ready the stuffing - In a big bowl add coconut, groundnut powder, all the spices except the hing, rai jeera which is for tadka
  • Add dhania, methi leaves finely chopped, few drops of oil, jaggery or sugar, and salt
  • Mix all well and stuff the brinjal and aloo one by one. If stuffing is remaining keep it aside
  • In a pressure cooker add oil, rai, jeera, hing, add stuffed aloo baingan, drum stick and sem phali
  • Add around 1 cup of water (I prefer thin curry), Add the remaining stuffing masala on top of it and close the cooker
  • Cook it on medium flame for 3 whistles and once the pressure is released open the cooker and give it nice mix. Serve immediately with rice or roti
