Easy Kaddu (Pumpkin) Sabzi infused with flavours of til (sesame seeds), methi dana (fenugreek Seeds) and basic spices
In today's fast paced life we all are looking for quick easy cooking. But in doing so we have to ensure to eat healthy and helps us to stay fit to meet the daily challenges of life. So here is a very nutritious Kaddu or Pumpkin Sabzi infused with flavours of til (sesame seeds), methi dana (fenugreek Seeds) and basic spices.
Pumpkin is loaded in vitamins, minerals and antioxidants and helps to boost immune system, protect your eyesight, lower your risk of certain cancers and promote heart and skin health. Sesame Seeds are excellent source of manganese and calcium, both of which help your bones grow healthy and strong. Lastly the methi dana which is fenugreek seeds helps in regulating blood sugar levels, improving cholesterol and blood pressure.
Note this Sabzi does not require any onion, garlic, tomato or green chillies. Just get a good quality Kaddu or Pumpkin Sabzi from the market.
Ingredients:
- 300 gms Kaddu or Pumpkin
- 1.5 tablespoon of oil
- 1/2 teaspoon each of mustard seeds and jeera
- 1/2 teaspoon each of til (sesame seeds) and methi dana
- Pinch of hing
- Salt to taste
- 1/2 teaspoon of haldi powder
- 1 teaspoon of Kashmiri Chilli powder
- Coriander leaves for garnish
- Remove the skin of the Kaddu or Pumpkin and cut into triangle shape slices. Don't cut too thick pieces. Thin slices will help in faster cooking
- In a pan heat the oil, add 1/2 teaspoon each of mustard seeds and jeera, let it splutter, add hing.
- Now add til (sesame seeds) and methi dana. Stir fry for a minute. Add haldi and Kashmiri chilli powder, slice Kaddu and salt
- Mix everything well and just add 2 to 3 tablespoon of water. Don't add too much water. We have to make dry sabzi. So just add water to the proportion of cooking the Kaddu. Cover the lid and cook the sabzi for 3 to 4 mins.
- Keep checking in between and in just 10 mins Kaddu will cook. Garnish it with coriander leaves and serve hot with roti.
