Khaman Dhokla - Soft and Fluffy Gujurati Snack made from just one cup of Besan
Khaman Dhokla is very popular Gujarati Snack. Often people buy it from outside as they feel it is complicated dish to make. But next time you feel like eating the dhokla do try out this recipe. I have given the stepwise recipe today to make the process simple.
Best part of Khaman Dhokla is it is made with easily available ingredients at home. Key ingredient is besan. Many add Rava or sooji as well but traditionally dhokla is made of besan only. As you can see in the pic with use of besan only you can soft, jhali wala and fluffy dhokla.
But just like cake making.. making a dhokla requires a perfect measurements and some easy techniques ..so here is the recipe... please note that mkt ones are very sweet.. this recipe is spicy, khatta and slightly sweet.
Recipe:
STEP 1 : In a bowl add 1 cup of besan, 2 pinch of haldi (don't add more haldi), 1/2 cup sour curd and slight water and keep for fermenting for 3-4 hours
STEP 2: Meanwhile, grease a small cake tin with oil and keep water in a steamer for boiling
STEP 3 - When the mixture is fermented now add salt, 2 pinch of baking soda and few drops of lemon juice, 1 tablespoon of oil and 1 teaspoon of hot water on all of this and mix in one direction only. Now pour mixture in a tin and cook it in a steamer for 20-25 mins on a high flame.
STEP 4 - While removing dhokla from the steamer never slow or close the flame or else dhokla will sink carefully remove it...check by piercing a toothpick. If it is clean it is cooked
Step 5: Now the tadka most important part :
Take 1.5 tablespoon of oil, add mustard, jeera, 2 big green chillies, hing. Once the tadka is ready. Close the gas
Now add 3 teaspoon of water. In water before only add 1/2 teaspoon of sugar, few drops of lemon juice. Mix well and add to tadka and let it get cook for few minutes so all the flavours will get mix well
Pour tadka on dhokla, some coriander leaves cut it into pieces and serve hot with green chutney and chai or coffee
