Pasta with No Maida, No Butter, No Cheese
When it comes to pasta we typically enjoy it with lots of Maida, Butter and cheese. But wait we all are getting health conscious and look for replacing all of these ingredients. So here is the pasta recipe that you can definitely give a try.
In this recipe wheat flour is used for the white sauce and few drops of olive oil to sauté and garlic with lots of veggies can give awesome taste to it. Flavours of mixed herbs, chilli flakes and nutmeg is used. Nutmeg yes you read it correct. I tried adding a pinch of Nutmeg to sauce and must say it gave awesome flavour to the pasta so do give it a try.
Ingredients:
- 1 cup of Penne Paste
- 1/2 cup each of sweet corn, carrot, capsicum and French beans
- 1.5 tablespoon of wheat flour
- 1 and half cup of Milk
- 7-8 garlic cloves
- 1 green chilli
- 1 Big size Onion
- 2 tablespoon of olive oil
- Salt to taste
- 1.5 teaspoon of mixed herbs
- 1/2 teaspoon of chilli flakes
- 1/2 cup each of sweet corn, carrot, capsicum and French beans

- 1/2 teaspoon of black pepper powder
- 2 pinch of Nutmeg
- Water for boiling and adjusting the sauce consistency

Recipe:
- In a pan boil the water add salt of veggies and pasta portion. Add sweet corn, carrot, French beans and Pasta
- Boil till everything is cooked up to 80% so u have the crunch in veggies and Pasta won't get too soft. Strain the water don't throw the water we use it later to adjust sauce consistency
- Crush the garlic and green chilli. Finely chop the onion and capsicum
- Heat 2 tablespoon of Olive oil, sauté garlic and green chilli first. Once done add capsicum, onion and add salt only in small portion
- Cover the lid and cook on low flame till onion and capsicum becomes soft.
- Add Pasta, veggies, 1 teaspoon of mixed herbs and 1/2 teaspoon of chilli flakes
- Mix everything well and cook on low flame for 3 to 4 mins
- In a bowl take 1.5 tablespoon of wheat flour and 1 and half cup of milk...mix it well ensure no lumps are there and transfer it to non stick pan and keep cooking on low flame for few mins
- Please mix it continuously and add 1/2 cup more of milk or vegetable stock to adjust the consistency....once it becomes thick...colour will change slightly add 1/2 teaspoon of black pepper powder, pinch of nutmeg powder, 1/2 teaspoon of mixed herbs and salt to taste
- Finally add the white sauce to veggies...cook for few mins and serve...u can add more herbs or vegetable stock to adjust the consistency and get the perfect taste
Notes:
- One more way to make the sauce is by cooking wheat flour in oil/ghee and then add milk....this method is same as traditional white sauce just replace Maida with wheat flour and butter is replaced with oil
- You can add more veggies like baby corn, yellow and red peppers, spinach
- You can add any fresh Italian herbs if you have it
