Kesar Peda and Dry Fruit Roll from homemade khoya

Diwali is just few weeks away. The biggest festival of the year - Diwali is celebrated with making of several traditional delicacies like Chakli, Chivda, Shakarpara, Sev and Besan Ladoo.  In addition there is tradition to gift and buy lot of sweets from the market be it Kaju Katli or Peda. However, at times market bought sweets don't have the purity or the taste like the homemade ones.  Since these sweets require storage there is addition of preservatives so they can have longer life.  

Today I am sharing two sweets made from the home made khoya. This sweets require making of the Khoya base. Once done you can add many flavours and make different variety of sweets. Making of Khoya will require cooking of Milk on low flame like a Halwai and add sugar.  No other ingredient like ghee or milk powder is needed. So lets see the process. 




Ingredients: 

  • 1 litre Milk
  • 1 cup sugar
  • Mix dry fruits of your choice (I have taken Almond, cashew, pista and charoli). Need 2 teaspoon of each 
  • 1 teaspoon of elaichi powder
  • 7-8 to kesar strands 
  • 1 to 2 teaspoon of dry rose petals 
Method:

  • In a thick bottom wide pan add 1 litre of Milk. Take either cow or buffalo milk.   Boil the milk on a low flame
  • Keep stirring in between.  The milk will gradually become thick. Once it becomes like a Rabdi consistency add one cup sugar
  • Once you add sugar initially the milk consistency will be watery but later on will start getting thick and slightly pinkish. 
  • The entire process will take 45 mins or so and ensure that once the khoya starts forming it does not stick the bottom of the pan 
  • Once you can khoya like consistency just take some in your hand. If it does not stick it is ready. Close the gas and let it cool down completely
  • Once it cools down the khoya will look like a dough
  • Now divide it in two portions.  
  • In the first portion add half teaspoon of elaichi powder and 7-8 kesar strands dipped in hot milk. Mix everything well. 
  • Give it a peda shape and garnish it with Pista and rose petals
  • Second portion of the dough
  • Take dry fruits of your choice (I have taken Almond, cashew, pista and charoli).  Chop it finely.  Add it in a small bowl add rose petals and half teaspoon of elaichi powder. 
  • Take the khoya, fill the dry fruits, rose petals and elaichi powder. Give it a shape of a roll. 
  • Garnish it with remaining mixture of dry fruits and rose petals. 
  • Keep both the sweets in a fridge for 15 to 20 mins and enjoy
