Palak Corn Pulao with Chaat Masala Pudina Mix Dahi - A meal cooked in just 20 mins
With the busy lifestyle we all are looking for easy meal options that can lighter and soothing for the stomach and quick to cook. So here is the recipe of Palak Corn Pulao that can be easily in just 20 mins. You can serve it with papad, achaar or Chaat Masala Pudina Mix Dahi shown in the pic. You can also take this Pulao in your office tiffin - very popular in my office among my colleagues or you can also give to you kids in school. The recipe served below is for one serving you can add more if making for the family. Do try it and share the feedback.
Ingredients:
- 1 cup of basmati rice
- 1/2 cup of corn
- 1/2 cup of chopped spinach or Palak
- Salt to taste
- 1.5 teaspoon of oil
- 1/2 teaspoon of jeera
- one pinch of hing
- two to three pinch of haldi
- 1/2 teaspoon of garam masala powder, dhania jeera powder and Kashmiri chili powder
- For the dip 1/2 cup of dahi, 1/2 teaspoon of Chaat masala, few chopped pudina leaves and half teaspoon of sugar (optional)
Method:
- Wash basmati rice and keep it ready
- In a pan heat the oil add jeera let it turn red, then add hing turn off the flame
- Add mirchi powder, haldi, corn and chopped Palak, salt, garam masala and dhania jeera powder. Next add one cup of water and turn on the flame once again
- Give it one boil and then add the rice and one more cup of water. Generally the ratio of rice to water is 1:2 i.e. 1 cup of rice and 2 cups of water. Depending on the quality of the rice you can add more or less water
- Cook the rice on low flame. Once the rice is half cooked close the lid and it cook. This was rice grain will cook beautifully. Keep checking in between. Once the water is soaked and rice is cooked close the gas.
- In a bowl, whisk the dahi, add some water if dahi is too thick, add 1/2 teaspoon of Chaat masala, few chopped pudina leaves and half teaspoon of sugar (optional)
- Refrigerate the dahi mix for 10 mins and Serve it with Pulao and Enjoy
