Traditional Maharashtrian Special Bhajani Chakali
This is a very special blog....I was born on Dhanteras during Diwali and we had a old Marathi Aunty who prepared this yummy melt in mouth Bhajani Chakali and gave it to my mom not to forget immense love and care she showered on my mom and told her don't worry u will have daughter born today ..bas tab se leke ab tak Chakali is special and closest to my heart. Unlike the regular Chakali which is bit hard. Bhajani Chakali is crispy and melt in mouth. In this Chakali you get good ness of rice and dal.
So here is the recipe...for this Chakali u need to make flour... u also get readymade Bhajani flour of Bedekar brand but not tried any...if u have shops where special flour are sold there are many in Mumbai u might get this flour from there as well then directly see step 2 below
Recipe:
Step 1 - Making of flour
U need to dry roast each of these separately till they turn pink, cool it and grind it (I gave to flour mill to grind it)
4 cups of Rice, 2 cup chana dal, 1 cup yellow moong dal, 1/2 cup urad dal and 1/2 cup of coriander seeds and jeera and 2 tablespoon of poha
Step 2 - Making of Chakali with 1 cup of above flour:
1) Boil 1 cup of water, add salt, haldi, chilli powder, til, jeera, hing and then add flour and with belan just tap the atta and make holes and close the gas and cover with lid
2) After 10 mins open the lid and apply some oil on your hands (don't put any oil in atta or else Chakali will break) and mix the atta well with your hands for 3 to 4 mins
3) Divide the atta into 2 to 3 parts and put it in the Chakali maker...start making the Chakali
4) Fry the Chakali on a low flame...cool it and put in air tight container and enjoy melt in mouth Chakali
