Cheese Pav Bhaji 

Pav Bhaji is the most loved dishes among all the age groups. With lots of winter veggies and amazing weather it is perfect time to enjoy this yummy dish.  Topping it with cheese takes Pav Bhaji to another level. If you are on diet or don't eat Aloo then you can replace it with Lauki or Boiled Kabuli Chana as well.  Below recipe is with Boiled Aloo. Do try it and yes you can add or delete any veggies as per your choice. 


Ingredients

  • Boil 7-8 potatoes
  • 2 tablespoon ghee and 1 tablespoon of oil
  • 1 tsp Jeera 
  • 1 dagad phool or Stone Flower Spice 
  • 5-6 onion and 5-6 tomatoes
  • 2 tablespoon crushed garlic
  • 1 big size capsicum
  • 1 cup of carrot, cauliflower and 1 cup boiled peas
  • 1 and 1/2 tablespoon Kashmiri chilli powder for the bhaji 
  • 1 and 1/2 tablespoon of garam masala powder or any pav bhaji masala you use 
  • 1.5 teaspoon of butter 
  • Salt to taste
  • Coriander leaves and 1/2 lemon juice
  • For roasting of Pav: 2 fresh Pav, 1 tablespoon of butter, 2 pinch of Kashmiri chilli powder 
  • Grated cheese for garnish


Recipe: 

  1. Step 1

    Boil the Aloo, cauliflower and carrot in the pressure cook, cool it, peel the Aloo and smash it together. 

    Boil the peas separately for 5 to 10 mins
  2. Step 2
  3. In a pan add oil, ghee, finely chopped onion and salt. Once onion turn pink add garlic paste 1

     dagad phool or Stone Flower Spice , Add salt only of onion tomato portion and 1 tablespoon of Kashmiri chilli powder
  4. Step 3

    Once the onion is cooked add chopped capsicum and after few mins add chopped tomatoes.

  5. Step 4

    Add garam masala and 1/2 cup water...let it cook for 5 to 7 mins 

  6. Step 5

    Add smash Aloo mixture to the onion tomato, add salt of aloo portion adjust the consistency and cook it on low flame. 

  7. While cooking keep smashing the bhaji in between, add butter,1/2 tablespoon of Kashmiri chilli powder and boiled peas. Also let the bhaji cook for 15 mins on a low flame and then serve 

  8. Step 6

    Once the bhaji is nicely cooked close the gas. Add chopped coriander leaves, squeeze half lemon juice

  9. Step 7

    For roasting of Pav, Heat the Tava, 

    Slit a pav horizontally, 1 tablespoon of butter, 2 pinch of Kashmiri chilli powder and place two Pav. Roast the pav nicely
  10. Step 8
  11. Serve the bhaji hot, grate the cheese on the top of the bhaji and enjoy it with Pav.
