Besan Drumstick  - A simple sabzi with goodness of Drumstick 

Drumsticks is a nutrient dense vegetable with the goodness of vitamins, fibre, protein and phosphorus.  Drumsticks helps in managing diabetes and fight infections due to their antioxidant properties. In addition, they help protect against inflammatory diseases such as arthritis and heart diseases. While typically drumsticks are added in Sambhar or made a soup. Today I am showing Besan Drumstick sabzi. This is very easy sabzi with two main ingredients - Besan and Drumstick and basic spices.  This is no onion garlic preparation.  This sabzi can be enjoyed with bhakri, roti or even plain rice. 




Ingredients

  • 2 long fresh Drumsticks 
  • 1/2 cup besan 
  • 1.5 cup water 
  • Salt to taste
  • 1.5 tablespoon of oil 
  • 1/2 teaspoon of mustard seeds 
  • 1/2 teaspoon of Kashmiri chili powder
  • 1 teaspoon of dhania jeera powder 
  • 2 pinch of haldi
  • 2 pinch of Hing 
  • 2 tablespoon of imli kajur ka pulp or you can add meethi chutney we use for chaat (this is most important ingredient) 
  • chopped dhania leaves 

Method: 

1) Chopped drumsticks into medium size pieces and boil it with some salt. Normal pan water boiling will take 25 mins. Drain the water and cool down the drumsticks. Or else you can pressure cook the drumsticks.  

2) Dry roast the besan in a kadai till it leaves the aroma. Ensure besan don't get burnt.  

3) Boil 1.5 cup water and take 1/2 cup of water from it and add to roasted besan. Add imli kajur ka pulp and Mix well and ensure there is no lumps in the besan 

3) In a thick bottom kadai heat the oil, add mustard seeds and pinch of Hing once it crackles. 

4) Add Kashmiri chili powder and 1 cup of hot water.  Now add salt, dhania jeera powder 

5) Add besan puree and mix everything well. If the consistency is very thick add more water. 

6) Now cook the mixture on a very low flame. Gradually it will become thick. Add boiled drumsticks. Continue mixing till it becomes nice curry like consistency It will take around 15 mins so be patient. Ensure the besan don't get burnt.

7) Garnish it with dhania and serve hot.
