Fasting Special - Kand or Indian purple Yam Aloo Sabzi with Pineapple Strawberry Mint flavor Dip 

Tomorrow is Maha ShivRatri Fasting and most of us will fast tomorrow to seek the blessings of Lord Shiva. So presenting a simple Kand or Indian purple Yam Aloo Sabzi which can be eaten as it is. The sabzi is served with Pineapple Strawberry Mint flavor Dip. You can also enjoy the sabzi with Puri or Paratha.  Purple yam is easily available in Maharashtra and Gujarat. If you don't get purple yam you can also make it from Suran. 




Ingredients:

For the sabzi: 

  • Boil 1 cup of chopped purple yam and 2 medium size Aloo
  • 1 tablespoon of ground oil or ghee
  • 1 teaspoon of jeera
  • 1 chopped green chilli and grated ginger
  • Sendha namak (used specially for fasting) as per taste 

For the Dip: 

  • Take 1/2 cup of finely chopped pineapple and strawberry 
  • Take 1 cup of Dahi/Curd and whisk it 
  • Add 1.5 teaspoon of Sugar and salt as per taste 
  • 8 to 10 mint leaves chopped finely 

Method: 

For the sabzi: 

  • Boil 1 cup of chopped purple yam and 2 medium size Aloo
  • Peel the skin of Aloo and Smash both Yam and Aloo with hands and keep it ready
  • In a pan add either 1 tablespoon of ground oil or ghee
  • 1 teaspoon of jeera. Let it turn red add 6 to 7 curry leaves 
  • Add 1 chopped green chilli and grated ginger
  • Add Smash mixture of Purple yam and Aloo
  • Add Sendha namak as per taste and cook the sabzi on a low for 5 to 7 mins 
  • Serve hot 

For the Dip:

  • Take 1/2 cup of finely chopped pineapple and strawberry 
  • Take 1 cup of Dahi/Curd, add water to adjust the consistency and whisk it 
  • Chopped 8 to 10 mint leaves finely and add it to Dahi
  • Add sugar and salt
  • Mix all well and cool it in refrigerator if needed 
  • Garnish it with strawberry and pineapple piece 
  • Serve it with sabzi
