Vrat Special - Rajgira Bhagar Aloo Mini Uttapam with Mint Peanut flavour Dahi 

Chaitra Navratri is just around the corner (March 23) and you can enjoy this Vrat or Fating special - Rajgira Bhagar Aloo Mini Uttapam with Mint Peanut flavour Dahi. Rajgira or Amaranth flour is also preferred by those who are on diet or portion controls. This can also be your breakfast option wherein you can replace the Aloo with Lauki. Do try it 


Ingredients: 

  • 1 cup Rajgira or Amaranth flour 
  • 1 grated Aloo
  • 1/2 cup Bhagar or Samak rice
  • 1/2 cup dahi
  • 1/2 cup water
  • Sendha namak as per taste 
  • 1/2 teaspoon each of green chilli, grated ginger and jeera 
  • 7 to 8 mint leaves 
  • Ghee or oil for cooking 
  • For the Dahi dip - Take 1/2 cup dahi, add some water, add salt, 3 to 4 mint leaves and 1 tablespoon of roasted peanut powder.

Method
  • In a bowl add one grated Aloo,  1 cup Rajgira or Amaranth flour,  1/2 cup Bhagar or Samak rice, 1/2 cup dahi and 1/2 cup water
  • Add Sendha namak as per taste, 1/2 teaspoon each of green chilli, grated ginger and jeera, 7 to 8 mint leaves 
  • Mix everything well and adjust the water if needed. It should have Uttapam batter consistency 
  • Cover it with lid and keep it for rest for 30 mins. 
  • After 30 mins check the consistency, mix well and heat the Uttapam pan. Pour few drops of oil or ghee and pour the batter 
  • Cook the Uttapam on a low flame on both sides. 
  • For the Dahi dip - In a bowl  take 1/2 cup dahi, add some water, add salt, 3 to 4 mint leaves and 1 tablespoon of roasted peanut powder. Mix everything well and serve it with Uttapam
