Mango Coconut Barfi 

The king of fruits - Mangoes has arrived and what better way to start enjoying these amazing fruit with a dessert.  A very easy and yummy Barfi ..yes barfi since I am big fan of Indian sweets.  The barfi has very few ingredients - desiccated coconut (dry coconut powder), mango pieces, sugar, elaichi powder with garnish of pista and dry rose petals. Do try it this summer season. 


Ingredients: 

  • 1 mango cut into small pieces
  • 1/2 cup sugar
  • 1/2 cup milk + 2 to 3 tablespoon 
  • 1 cup of desiccated coconut (dry coconut powder)
  • 1/2 teaspoon of elaichi powder 
  • 1 teaspoon of ghee
  • Some chopped pista and dry rose petals for garnish 
Method: 

Step 1
In a thick bottom pan add 1/2 cup milk, let it boil then add elaichi powder, sugar and let the sugar melt.

Step 2 
Once the sugar melts first add 1 cup of desiccated coconut (dry coconut powder) and mix well. If needed add 2 to 3 tablespoon of milk.  Let the coconut cook with milk on low flame till it leave the sides of the pan

Step 3
Lastly add small chopped pieces of mango and smash it in coconut mixture and let it cook.  Once the mango binds well with the coconut and milk. Add 1 teaspoon of ghee. Use some ghee to grease the plate


Step 4
When the mixture leaves the sides of the pan it is ready. Put it in the plate and garnish it with pista and dry rose petals.  Cut into pieces and serve.
